Lamb's lettuce with raspberry dressing and honey-baked goat's cheese

Ingredients for 4 servings:

  • 400 g lamb’s lettuce
  • some radicchio
  • some frisée lettuce
  • 3 tbsp vinegar (raspberry vinegar)
  • 3 tbsp oil (walnut oil)
  • 2 tbsp water
  • salt and pepper
  • some garlic
  • 4 tsp honey (orange blossom honey)
  • 4 goat’s cheese coins
  • n. B. Flowers, edible for garnishing
  • 4 sprigs of thyme, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the lettuce and shred into bite-sized pieces, spin dry. Combine the vinegar, oil, and water in a bowl and mix well. Season with salt, pepper, and garlic. Carefully toss the lettuce in the bowl with the dressing and arrange on a plate. Place the goat cheese slices on a plate, leaving enough space between them. Place a piece of the lower part of the thyme sprig on the cheese, and drizzle with honey. Bake the cheese at 250°C (top heat) for 5 minutes. Arrange on the salad plate and garnish with flowers.
