Ingredients for 4 servings:
- 12 stalk(s) asparagus, white
- 1 pinch of salt
- 1 pinch(s) of sugar
- 50 g arugula
- 4 slice(s) ham, Italian
- 125g mozzarella
- 200 ml hollandaise sauce with crème fraîche
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes
Peel the asparagus and trim the ends. Cook in boiling salted water with the sugar for about 15 minutes. Drain the asparagus. Trim and wash the arugula. Wrap three asparagus spears each with arugula and ham. Set some arugula aside. Cut the asparagus into pieces according to length. Slice the mozzarella. Pour the hollandaise sauce into a shallow baking dish. Add the asparagus parcels and top with the mozzarella. Bake in the oven at 225 degrees Celsius (convection oven) for about 20 minutes. Garnish with the remaining arugula before serving.
