Ingredients for 4 servings:
- 1 head of iceberg lettuce
- 1 pineapple, fresh or from the can
- 1 can mandarin(s), sweetened
- e.g. cherry tomatoes
- 400 g chicken breast fillet(s)
- salt and pepper

Wash and chop the lettuce, then place it in a bowl. Then add the pineapple and mandarin oranges. If you can’t find fresh pineapple, you can use canned sweetened pineapple. It tastes even better with fresh pineapple. Halve the cherry tomatoes and mix them into the salad. Cut the chicken into bite-sized pieces, season with salt and pepper, and pan-fry. Let the chicken cool and then mix it into the salad. A fruity dressing goes well with it. I used a ready-made one.
