Meatballs in tomato sauce

Ingredients for 4 servings:

  • 1 large onion(s)
  • 2 cloves garlic
  • 500 g minced beef or mixed
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • salt and pepper
  • Thyme, dried
  • 2 tbsp olive oil
  • 1 bunch of spring onions
  • 1 large can of peeled tomatoes (850 ml)
  • 100 g green olives with pepper filling
  • 150 g sheep’s cheese or feta cheese

Peel and finely dice the onions and garlic. Knead the minced meat, onions, garlic, egg, and breadcrumbs thoroughly. Season the minced meat mixture with salt, pepper, and thyme. Form the mixture into small meatballs. Fry them all over in hot olive oil for about 10 minutes. Trim and wash the spring onions and cut them into pieces. Remove the meatballs from the pan. Fry the spring onions in the frying fat for about 3 minutes. Add the tomatoes, meatballs, and olives (chop them finely if desired). Season with salt and pepper. Simmer for about 15 minutes. Sprinkle with crumbled feta cheese just before serving. Serve with salad, rice, or pasta, if desired.
