Ingredients for 1 servings:

  • 2 kg pumpkin(s)
  • 800 g sugar
  • 500 ml vinegar (apple cider vinegar)
  • 150 ml apple juice
  • 1 lemon(s)
  • 50 g fresh ginger
  • 2 stalk(s) cinnamon
  • 10 cloves
  • 2 star anise

Working time approx. 30 minutes; Total time approx. 30 minutes

makes about 8 glasses

Dice the pumpkin. Combine the sugar, vinegar, apple juice, and lemon juice in a saucepan. Peel the ginger, coarsely grate it, and add it to the pan with the spices. Bring to a boil. Add the pumpkin cubes and cook until translucent. Pour the hot chutney into jars and seal immediately.
