Ingredients for 2 servings:
- 80 g goat cheese, as a roll
- 4 slices of Black Forest ham
- 2 handfuls of lamb’s lettuce
- 25 g walnut kernels
- 1 tsp powdered sugar
- 25 g cranberries, dried
- 1 orange(s)
- 2 tbsp balsamic vinegar (balsamic fruit vinegar), e.g. blueberry or raspberry vinegar
- 1 tbsp pumpkin seed oil
- 1 tbsp grape seed oil or another neutral oil
- 1 tsp agave syrup or honey or sugar
- salt and pepper

Working time approx. 25 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 31 minutes
Winter appetizer
Cut two slices per person from the goat cheese roll. Wrap each slice with a slice of Black Forest ham. Wash the lamb’s lettuce thoroughly. Chop the walnuts, toast them briefly in a dry pan, sprinkle with powdered sugar, let them caramelize in the pan, stirring constantly, and then remove from the pan. Generously peel the orange with a knife, cutting off any white parts and scooping out the segments. Retain the juice and squeeze out any excess. For the dressing, whisk together the reserved orange juice, vinegar, oils, and agave syrup (or honey or sugar), and season with salt and pepper. In a bowl, mix the lamb’s lettuce, caramelized walnuts, orange segments, and cranberries with the dressing. Fry the ham-wrapped goat cheese slices in a pan on both sides and serve with the salad. Tip: As a vegetarian alternative, the goat cheese slices can be sprinkled with a little powdered sugar and flambéed, or breaded with seasoned flour, egg and breadcrumbs and baked in fat.
