Ingredients for 4 servings:
- 400 g chicken breast fillet(s)
- salt and pepper
- 3 tbsp oil
- 1 tbsp curry powder
- 100 ml port wine
- 400 g grapes, blue
- 1 lettuce(s)
- 150 g crème fraîche
- 1 tsp lemon(s), zest, grated
- 1 tbsp lemon juice
- ½ bunch chives
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Brown the chicken breast in hot oil and season with salt and pepper. Stir in the curry powder and fry briefly, then add the port wine and simmer covered over low heat for 5-8 minutes, turning once halfway through. Halve and deseed the grapes, and tear the lettuce into bite-sized pieces. Remove the meat from the pan and cut into thin strips. Mix the pan juices with the crème fraîche and reduce to a creamy sauce. Season with salt, pepper, lemon zest, and lemon juice. Arrange the lettuce leaves, grapes, and meat on plates and coat with the sauce. Sprinkle with chives.
