  • 180 g rice
  • 90 g feta cheese
  • e.g. sesame
  • Salt
  • Water

quick and easy variation of a rice side dish

Simmer the rice (e.g. Basmati) in twice the amount of salted water with the pan uncovered, stirring occasionally, until the rice has completely absorbed the water. Parboiled rice is not suitable as it does not achieve the sticky consistency. Then let the rice cool down. Meanwhile, cut the feta cheese into 9 equal pieces. With moistened hands, form the cooled rice into 9 equal-sized balls and place a piece of feta cheese in each one. Then roll the balls in sesame seeds. The rice balls are great to make in advance. Simply heat the required number of rice balls in the microwave before serving so that the feta core melts. Suitable for all dishes that call for rice as a side dish. Tip: I like to add a little dried coriander or saffron to the rice.
