Ingredients for 4 servings:
- 1 ½ cup(s) rice
- 2 cups water
- 2 tomatoes
- Tomato paste
- Tomato ketchup
- Salt
Instructions
Working time approx. 5 minutes; Total time approx. 5 minutes
Place the rice and water in a microwave-safe bowl with a pinch of salt. Cook at 600 watts for 10 minutes. Meanwhile, dice the tomatoes. After 10 minutes, add the diced tomatoes, a little tomato paste (about 2-3 tablespoons), and ketchup to taste, and cook for another 15 minutes at 600 watts. After this time, the rice should be al dente and the tomatoes should be soft. If not, add another 2-3 minutes. This goes perfectly with chicken thighs and stir-fries where you can’t get any sauce and regular rice is usually quite dry!
