Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter
  • 100 g quark
  • 1 tsp baking powder
  • 1 tsp salt
  • 400 g leek
  • 200 g cheese (Gouda)
  • 200 g ham, raw
  • 200 g cream
  • 4 eggs
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Using a food processor, combine flour, butter, quark, baking powder, and salt into a smooth dough. Press this dough into a greased springform pan (26-28 cm), pull up one edge, and pre-bake at 180-200°C for about 15 minutes. In the meantime, trim the leeks, cut them into rings, blanch them in boiling water, drain well, and refresh in cold water. Finely dice the cheese and ham or chop them in a food processor. Spread the leeks over the dough. Whisk the cream with eggs, salt, pepper, and nutmeg, mix with the cheese and ham, and spread over the leeks. Bake in the oven at 170-190°C for 50-60 minutes. Serve with a green or mixed salad—a dream!
