Ingredients for 1 servings:

  • 500 g spelt flour
  • 20 g yeast
  • 1 egg(s)
  • 1 egg yolk for brushing
  • 40 g butter
  • 300 g natural yogurt with high fat content
  • 1 tsp salt or sugar, depending on whether you like it sweet or savory

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Combine flour, egg, salt, and yeast in a bowl. Gently warm the butter and yogurt, then add to the other ingredients and knead for about 10 minutes. Let the dough rest for 30 minutes. Roll out the dough into a circle about 3 mm thick. Cut the dough into three long corners and roll each piece up from the wide side. Brush the dough pieces with egg yolk and bake at 230 degrees Celsius (convection oven) for about 12-15 minutes. Tip: If you’d like a savory twist, you can fill the croissants with ham, seeds, onions, bacon, or cream cheese before rolling them up.
