Ingredients for 2 servings:
- 500 g rice
- 2 small onions, red
- 150 g feta cheese
- 30 g dried tomatoes
- 6 tbsp olive oil
- 5 tbsp herb vinegar
- salt and pepper

- 5 large tomatoes

easy and quick to prepare
Cook the rice according to the package instructions. Meanwhile, crumble the feta cheese. Dice the fresh and sun-dried tomatoes. Halve the onions and slice them into rings. Combine everything with the rice in a large bowl and toss with oil and herb vinegar. Season with salt, pepper, and any herbs you like, and let it sit. Tips: It tastes even better if you let it sit overnight. I prefer basmati rice for this.
