Ingredients for 6 servings:
- 250 g bulgur, salted
- 3 tomatoes
- 1 ½ bell peppers
- 1 bunch of spring onions
- 3 tbsp mint, chopped
- 4 tbsp parsley, chopped
- 8 tbsp lemon juice
- 8 tbsp olive oil
- 3 tbsp tomato paste
- 4 tsp Ras el Hanout
- 2 tsp sweet paprika powder
- 2 tsp sugar
- 2 tsp sambal oelek
- 1 tsp salt and pepper
- 200 g feta cheese

with or without feta
Cook the bulgur according to the package instructions and let cool. Dice or chop the vegetables and herbs. Spicy peppermint from a Turkish supermarket is best. You can also find the Ras el Hanout seasoning mix there. Blend the remaining ingredients into a sauce and stir in. Add the bulgur. Finally, fold in the diced feta. Tips: The salad should be prepared the day before serving to allow it to marinate properly. The salad also tastes delicious vegan—that is, without the feta cheese.
