Strawberry cheesecake on a tray

Ingredients for 1 servings:

  • 400 g wheat flour or spelt flour
  • 300 g butter, soft
  • 150 g sugar
  • 100 g whipped cream
  • 5 eggs, size M
  • 1 kg cream cheese
  • 1 packet of vanilla sugar
  • 1 tbsp vanilla pudding powder
  • 1 tsp lemon zest
  • 1 ½ kg strawberries
  • 2 pts. cake glaze, red

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Preheat the oven to 180°C (top/bottom heat) or 160°C (fan oven). Mix the flour, butter, and sugar until crumbles form. Line a baking tray with baking paper, spread the crumbles on top, and press into a base. Whip the cream until stiff peaks form and refrigerate. Mix the quark with the eggs, pudding powder, vanilla sugar, and lemon zest until well combined. Then fold in the cream. Spread the mixture on the baking tray and bake the cake for 40 minutes. In the meantime, wash and quarter the strawberries. After baking, let the cake cool. Spread the strawberries on the cheesecake. Prepare a cake glaze according to the package instructions and spread it on the cake. The cake also tastes delicious with other fruit.
