Bratwurst with colorful salad

Ingredients for 4 servings:

  • 4 bratwursts (Thuringian)
  • 4 m.-sized potatoes, or jacket potatoes from the previous day
  • 4 tomatoes
  • 2 yellow bell peppers
  • 1 red bell pepper(s)
  • 4 spring onions
  • 1 small fennel
  • 2 tbsp parsley
  • 3 tbsp rapeseed oil
  • 3 tbsp red wine vinegar
  • black pepper
  • Salt
  • 1 pinch(s) of sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook the potatoes in their skins, let them cool slightly, and then peel them. Cut the tomatoes into eighths. Halve the bell peppers, remove the white inner membranes and seeds, and cut into strips. Slice the spring onions into rings. Halve the fennel, remove the stalk, and finely slice. Finely chop the parsley. For the dressing, combine all the ingredients. Place the salad ingredients in a bowl, toss with the dressing, and let it marinate. Meanwhile, score the sausages, grill them, or pan-fry them in 1 tablespoon of oil.
