Ingredients for 4 servings:
- 1 pork fillet(s)
- 400 g mini dumplings
- 200 g lamb’s lettuce
- 100 g cherry tomatoes
- 1 tsp mustard, grainy
- 2 tsp honey
- 5 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
First, heat 2 tablespoons of oil in a pan. Season the fillet with salt and pepper and sear on all sides. Then place the meat in the oven at 175°C (top/bottom heat) or 150°C (convection oven) for 15 minutes. In the meantime, cook the minced dumplings according to the package instructions, then drain and let them drain well. Mix the mustard and honey, add to the pan with the dumplings, and toss to coat. Serve the plates with lamb’s lettuce and halved cherry tomatoes. Mix the balsamic vinegar with salt, pepper, and the remaining olive oil and drizzle over the salad. Remove the fillet from the oven, slice, and arrange on the salad. 430 kcal per serving
