Low-carb sunken apple pie

Ingredients for 1 servings:

  • 8 apples, approx. 1.5 kg
  • ½ lemon(s), juice
  • 4 eggs
  • 75 g erythritol (sugar substitute) or other sweetener
  • 1 tsp vanilla flavor
  • 1 tsp cinnamon
  • 1 pinch of salt
  • 120 ml almond milk (almond drink)
  • 2 tbsp coconut oil
  • 50 g walnuts
  • 60 g almond flour
  • 1 tsp baking powder
  • powdered sugar
  • Walnuts

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Preheat the oven to 180°C (top/bottom heat). Line the bottom of a 26cm springform pan with baking paper and grease with a little coconut oil. Peel, quarter, core, and thinly slice the apples. Toss with lemon juice. Beat the eggs with erythritol, vanilla, cinnamon, and salt for about 3 minutes. Mix the almond milk and coconut oil and stir into the egg mixture. Mix the almond flour with the baking powder, sift it into the egg mixture, and mix in. Add the apples and walnuts and mix in. Pour the batter into the prepared pan and spread evenly. Bake in the hot oven for about 50-60 minutes. Remove from the pan and let cool on a wire rack. Then remove from the pan. Before serving, dust with powdered sugar and scatter the walnuts on top.
