Ingredients for 1 servings:
- 2 apples
- 15 dates
- 50 g pear(s), dried
- 1 tbsp cocoa powder
- 50 g butter
- 2 eggs
- 2 tbsp almonds, ground
- 2 tbsp walnuts, ground
- 2 tbsp yogurt
- 250 g flour
- 1 packet of baking powder
- some vanilla pod(s), ground
- 1 orange(s), zest
- some ginger powder
- some cinnamon powder (Ceylon cinnamon)
Instructions

Slice 1 1/2 apples and simmer until soft. Pit the dates, if desired, and cut into very small cubes. Cut the pears into very small cubes. Soak the dates and pears in a bowl with 250 ml of warm water for 30 minutes. Peel the simmered, slightly cooled apple slices and mash the soft flesh with a fork in a large bowl. Add the diced butter and eggs and mix for about 2 minutes. Add the dates and pears with the water to the egg mixture. If desired, puree the dates and pears with the water beforehand. Add the cocoa, nuts, spices, yogurt, and orange zest and mix. Peel half the raw apple, cut into small cubes, and mix in. Add the flour and baking powder and mix well. Grease any loaf pan and pour in the batter. Bake the mixture in a preheated oven at 175°C (convection oven) for approximately 45 minutes. Check the doneness after the 30th minute using a skewer test. The cake is done when no batter sticks to the skewer. Let the cake cool slightly and then turn it out of the pan. Tip: If you want the cake to be drier, add 1 tablespoon of yogurt and 3 tablespoons each of the nuts to the batter. For a fluffier finish, beat the egg whites until stiff peaks form and fold them into the mixture.
