Feta pockets with honey figs and sesame on lamb's lettuce

Ingredients for 4 servings:

  • 200 g feta cheese, cut into 8 cubes
  • 50 g butter
  • olive oil
  • rosemary
  • 4 tbsp sesame seeds, dry roasted
  • 8 figs, ripe, quartered
  • 4 tsp honey
  • 150 g lamb’s lettuce
  • 4 tbsp olive oil
  • 2 tbsp vinegar (raspberry vinegar)
  • 2 tbsp maple syrup
  • 12 WanTan wrappers

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Whisk or shake together olive oil, raspberry vinegar, and maple syrup for a dressing. Toss with the lettuce and divide among 4 plates. Brush the wonton wrappers with half of the melted butter, arrange the cheese cubes on top, sprinkle with rosemary, and wrap tightly. Fry the wrappers in plenty of olive oil until golden brown and place on the salad. Briefly(!) toss the fig slices in the remaining butter, add the honey, and quickly caramelize the figs. Spread the mixture over the salad and serve sprinkled with toasted sesame seeds.
