Chocolate-banana-coconut dream

Ingredients for 1 servings:

  • 3 eggs
  • 100 g sugar
  • 80 ml sunflower oil
  • 2 bananas, overripe (brown)
  • 4 tbsp coconut milk, light
  • 2 tbsp honey
  • 150 g flour
  • 20 g cocoa
  • 30 g coconut flakes
  • 1 tsp. baking soda
  • ½ pack of baking powder
  • Chocolate sprinkles as desired

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Combine the oil and sugar with a hand mixer and gradually add the three eggs. Beat until creamy and fluffy. Mash the bananas with the coconut milk and honey and add them to the batter, mixing well. Sift the flour, cocoa powder, baking soda, and baking powder over the batter and mix briefly. Finally, add the coconut flakes and, if desired, chocolate sprinkles, mix briefly, and pour the batter into a greased baking pan. Bake in a preheated oven at 150°C (convection oven) for about 45 minutes (depending on the oven – use a toothpick to test for crackers). Decorate with chocolate icing, etc., as desired.
