Ingredients for 2 servings:
- 2 fish fillets (e.g. redfish or cod fillets)
- 8 small tomatoes (12 for cherry tomatoes)
- 1 bunch of spring onions
- 200 g feta cheese (with fat, preferably sheep’s cheese)
- 1 chili pepper(s), fresh
- 2 cloves garlic
- 2 tbsp thyme
- lots of olive oil
- a little lemon juice
- some salt and pepper
- 1 baguette(s)

Dice the tomatoes and feta cheese. Finely chop the spring onions, garlic, and chili pepper. Toss everything in a bowl with plenty of olive oil, thyme, salt, and pepper. Then place a fish fillet on each piece of baking paper, drizzle with lemon juice, and season with salt and pepper. Spread the entire mixture evenly over both fish fillets. If you like, you can also place another piece of fish on top. Fold the whole thing into parcels and seal them fairly tightly, stapling if necessary. Place everything on the grill rack in a preheated oven at 200°C for 30-40 minutes, with a baking tray underneath in case any spills occur. Good baking paper will hold up. Serve best in a baking paper boat with a baguette.
