Salmon prawns in orange cream sauce with saffron

Ingredients for 4 servings:

  • 200 g salmon fillet(s)
  • 240 g shrimp(s)
  • 2 spring onions
  • 200 ml cream
  • 200 ml milk
  • 200 ml orange juice
  • 2 tsp cornstarch
  • olive oil
  • Salt and pepper, white
  • e.g. saffron

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Cut the salmon into cubes. Place the shrimp in a sieve, rinse with water, and let drain. Slice the spring onions into rings. Heat the cream, milk, and orange juice in a saucepan. Meanwhile, briefly fry the shrimp, salmon, and spring onions in olive oil. Then add them to the orange and cream sauce. Dissolve the cornstarch in a little cold water and add it to the sauce. Bring to a boil briefly. Add saffron, if desired, and serve. Grated Parmesan cheese is delicious with it. Tip: The salmon fillet can be replaced with smoked salmon. Simply cut it into strips and add it to the sauce.
