Ingredients for 1 servings:
- 350 g flour
- 2 tsp baking powder
- 170 g margarine
- 80 g sugar
- 1 egg(s)
- 2 g salt
- 250 g cranberries from the jar
- 185 g sugar
- 70 g margarine
- 3 eggs
- 65 g flour
- 750 g quark
- ½ tsp cinnamon powder
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes
Mix all the ingredients for the base in a mixing bowl with a dough hook. When the dough is smooth, remove it from the bowl and form it into a ball. Roll out the dough. Line the bottom and sides of a 24 cm springform pan with the dough. I use a dark baking pan. Spread the cranberries on top of the dough. For the cheese mixture, mix the sugar and margarine in a mixing bowl with a whisk until creamy. Beat in the eggs one at a time. Add the flour and mix into the mixture. Finally, add the quark and cinnamon and continue stirring for a few minutes. Carefully pour the cheese mixture into the springform pan and bake the cake at 175 °C with fan assisted oven for about 50 minutes. The cake will rise during baking but will shrink again as it cools. Small cracks on the surface of the cake after baking are normal.
