Summer sausage salad

Ingredients for 4 servings:

  • 400 g ham sausage, finely cut into strips
  • 100 g tongue sausage, cut into strips
  • 1 bell pepper(s), red
  • ½ cucumber(s)
  • 5 radishes
  • 3 slice(s) cheese (Maasdamer), cut into strips
  • 1 large onion(s), red
  • salt and pepper
  • nutmeg
  • Salad herbs
  • 3 tbsp herb vinegar
  • 4 tbsp rapeseed oil

Either cut the sausage into thin strips yourself or have your butcher do it. Peel the red bell pepper (it’s easier to digest) and also cut it into thin strips. Grate half a cucumber into fine sticks. Cut the radishes into very fine slices. Cut the cheese into thin strips. Cut the onion into wafer-thin strips or into small cubes. Place all the ingredients in a large glass bowl. Sprinkle with salt, pepper, nutmeg, and salad herbs, then add the vinegar and finally the oil. Only then should everything be carefully mixed together. If you like, you can add freshly chopped parsley and a few quartered cherry tomatoes on top. Let the salad marinate for at least 1.5 to 2 hours. It tastes especially delicious with crispy fried potatoes or hash browns, or with fresh farmhouse bread!
