Potato pancake bites

Ingredients for 1 servings:

  • 8 potato pancakes, homemade or frozen
  • 8 slices of cheese (Gouda), young
  • 100 g ham or bacon
  • 1 small onion(s)
  • Herbs, e.g. chives, arugula

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Place the potato pancakes (please thaw frozen ones beforehand) on a baking sheet in the oven on the middle rack under the broiler without oil and let them broil until golden brown and crispy on both sides. In the meantime, cut the ham or bacon into cubes or strips, cut the onion into thin rings or very fine dice, and chop the herbs. Remove the potato pancakes from the oven, quickly top with cheese, ham, and onions, if desired, and return them to the broiler for about 1 minute. Remove, immediately sprinkle with the herbs, and place two pancakes on top of each other, so that the cheese is on top of the cheese. Let the pancakes cool slightly and then cut them into quarters. The two halves will stick together firmly thanks to the cooled cheese. Serve as a snack or finger food once cooled. The topping can be varied. The cheese is important as a “glue.” For the cheese, I recommend milder varieties like young Gouda. Heartier cheeses will dominate too much in this dish. One serving of this recipe makes 16 bites.
