For the batter: Separate the egg and beat the egg whites until stiff. Mix the remaining ingredients into a batter and fold in the beaten egg whites. Divide the batter between one or two baking tins and place in a preheated oven at 180°C for 15 minutes using a fan oven. (I used two silicone molds!) Remove the layers from the oven, let them cool completely, and then remove them from the tin. For the cream: Chop all the remaining strawberries except for 2-3 for decoration and set aside. Mix the quark with the cocoa, psyllium husks, sweetener, and about 150g of sliced strawberries and spread on one layer. Place the second layer on top. Briefly microwave or simmer about 50g of strawberries with a little water and the chia seeds until jam forms. Spread this on the second layer and garnish with the decorative strawberries. Refrigerate the cake overnight.
