Tortellini casserole with minced meat and vegetables

Ingredients for 5 servings:

  • 300 g tortellini from the refrigerated section
  • 1 tbsp olive oil
  • 1 medium-sized bell pepper(s), red or yellow (approx. 150 g)
  • 80 g zucchini
  • 50 g mushrooms
  • 250 g minced meat, mixed
  • 500 g tomatoes, pureed
  • 1 clove(s) garlic
  • 1 medium-sized onion(s), diced
  • 30 g tomato paste (triple concentrated)
  • 200 g cheese, grated (gratin cheese)
  • 10 g broth
  • ½ tsp curry paste, red
  • 1 tsp oregano, dried
  • 1 tsp thyme, dried
  • 1 tsp Genovese pesto
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Chop the bell peppers, zucchini, and mushrooms and set aside. Lightly fry the onions in olive oil in a pan, then add the tomato paste. Now add the minced meat and fry. Add the herbs (oregano and thyme). Add the passata to the pan, along with the vegetables. Then add the broth, curry paste, pesto, and finally the tortellini. Season with salt and pepper. Transfer everything to a baking dish and sprinkle with gratin cheese (alternatively Gouda or mozzarella). Place in the oven at 180°C until the cheese has melted and turned golden yellow.
