Quiche with spinach, feta and salmon

Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter
  • 4 tbsp milk
  • 1 bell pepper(s)
  • 200 g feta cheese (sheep’s cheese)
  • 2 onions or shallots
  • 100 g fresh leaf spinach
  • 150 g smoked salmon
  • 200 g cheese for topping
  • 4 eggs
  • 100 g cream
  • e.g. salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

First, make a shortcrust pastry from the flour, butter, and milk, along with a pinch of salt. Place this in the refrigerator to cool. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Now finely chop the peppers, onions, and feta. Mix the eggs with the cream, salt, pepper, nutmeg, and half of the cheese. Line a springform pan with the shortcrust pastry. Add the peppers, onions, and feta, then the salmon and finally the spinach. Pour the egg mixture over the quiche and sprinkle the remaining cheese over the quiche. Bake the quiche in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for 30-45 minutes. Serve with a green salad.
