Meatballs in mustard sauce

Ingredients for 4 servings:

  • 500 g minced meat (1/2 beef, 1/2 pork)
  • 1 egg(s)
  • 2 tbsp crème fraîche
  • 1 liter meat broth
  • 40 g butter
  • 40 g flour
  • 200 ml cream
  • 4 tbsp mustard (medium hot)
  • 1 bunch of chives
  • salt and pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Knead the minced meat with the egg, crème fraîche, salt, and pepper, and form into 20 small dumplings. Bring the meat broth to a boil and let the dumplings cook until they float to the surface. Heat the butter in a saucepan, sauté the flour, deglaze with 1/2 liter of meat broth (from the dumplings), add the cream and mustard, and season with salt, pepper, and a little sugar. Finely chop the chives and add them to the sauce along with the dumplings.
