Ingredients for 2 servings:
- 50 g kohlrabi
- ½ red bell pepper(s)
- ½ bell pepper(s), yellow
- ½ bell pepper(s), green
- 1 can corn, drained
- 125 g cooked ham
- 1 large beefsteak tomato(s)
- 50 g cheese, grated
- 1 cup rice
- salt water
- Salt
- Paprika powder
- Ginger
- cumin
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Fresh and delicious. Also great for using up leftovers.
Wash, trim, and dice all the fresh ingredients. Dice the cooked ham as well. Add the rice (1 cup of loose rice with 2 cups of water and a little salt). Brown the cooked ham well, then add the diced bell peppers and corn and brown them as well. Now add the kohlrabi. Sprinkle generously with paprika (until a reddish coating has formed on the vegetables). Then add the ginger and cumin. Finally, add the tomatoes and season with salt. Let the whole thing simmer for a bit longer. (This is a good time to turn off the stove to save energy.) When the liquid from the rice has evaporated, turn off the heat, add the cheese, and stir well.
