Ingredients for 1 servings:
- 250 g spelt flour
- 250 g wholemeal spelt flour
- 1 packet of baking powder
- 1 packet of vanilla sugar
- 40 g sugar
- 120 g margarine or butter
- 500 g low-fat curd cheese
- 2 eggs
- 50 g almond flakes or sticks

quick, easy, light and delicious
I’m one of those bakers who always reduces the sugar in most recipes. As we all know, sweetness is a matter of taste; I prefer it less sweet. Otherwise, simply increase the sugar to 150g. Preheat the oven to 180 degrees. Put all the ingredients in a mixing bowl and mix well using a hand mixer fitted with a dough hook. Then knead briefly by hand. Place the dough on a baking tray lined with baking paper and shape into a stollen. Bake the stollen for about 50 to 60 minutes, depending on your oven. I brush the stollen with a little margarine or butter while it’s still hot. If you like, you can then sprinkle it with powdered sugar. The stollen ingredients can of course be easily adjusted to taste. For example, you can also add raisins soaked in rum. If you normally only bake with wheat flour, you can simply use 500g of this; it tastes good too.
