Ingredients for 1 servings:

  • 250 g raspberries, unwashed
  • 125 ml fruit vinegar
  • 125 ml white wine, strong
  • 40 ml raspberry liqueur
  • 50 g sugar

especially good for vinaigrette with walnut oil and green salads

Place the raspberries, vinegar, and wine in a container and seal tightly. Place the container in a bright, sunny spot and let stand for about 4 weeks. Then pour the mixture through a sieve lined with cheesecloth into a saucepan and wring the cheesecloth out vigorously. Bring the mixture to a boil briefly and add the sugar. Once dissolved, let it cool and bottle. It’s especially good with green salads; for a more sophisticated dressing, mix it with walnut oil to make a vinaigrette. The vinegar will keep until the next raspberry harvest. It makes a great small gift for guests—you’re sure to get compliments!
