Fruity raspberry vinegar

Ingredients for 1 servings:

  • 600 ml white wine vinegar
  • 500 g raspberries, fresh or frozen
  • 200 g sugar
  • ½ vanilla pod(s), split

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Mild, homemade

Bring the vinegar, sugar, and vanilla pod to a boil. Then add the raspberries and simmer gently for about 10 minutes. Then filter the liquid, remove the vanilla pod, and squeeze the fruit thoroughly (this works best through a thin cotton kitchen towel). Mix with the liquid. Bottle the vinegar while it’s still hot and let it cool. Makes just under 1 liter. It tastes great with all green leafy salads. It’s also delicious for seasoning pasta and rice salads. My girlfriend has already used it to refine gravy and red cabbage. It also works well with other fruits. Always use well-ripened, seasonal fruit; it has the best flavor. Frozen fruit is also good.
