Pasta with shrimp and arugula

Ingredients for 2 servings:

  • 300g spaghetti
  • some butter
  • 24 shrimp(s)
  • 1 red chili pepper(s)
  • 2 garlic cloves
  • 10 cherry tomatoes
  • 2 tbsp peanut oil
  • 2 handfuls of arugula
  • 1 handful of Parmesan, cut into strips sliced, optional

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 28 minutes

Cook the pasta according to the package instructions until al dente. Then toss in a little butter and keep warm. Thinly slice the garlic and chili pepper, and quarter the tomatoes. Heat the peanut oil in a wok, fry the garlic, chili, and shrimp, and toss to combine. Finally, add the tomatoes to the pan. Portion the spaghetti into deep plates, add a handful of arugula, and top with the ingredients from the wok. If you like, sprinkle with a few strips of Parmesan cheese.
