Ingredients for 2 servings:
- 1 stalk(s) Lemongras
- 6 slices galangal
- 2 small Thai chili peppers, red, hot
- 6 kaffir lime leaves
- 2 tbsp chili paste (Thai chili paste – Tom Yum chili paste in oil)
- 250g spaghetti
- 1 can of tomatoes, peeled, whole, approx. 400 g
- 15 king prawns
- 1 small onion(s), finely diced
- 150 g shimeji mushrooms or other Asian mushrooms, such as oyster mushrooms
- 1 ½ tbsp lime juice, freshly squeezed
- 1 handful of coriander leaves, roughly chopped
- some Parmesan, freshly grated
- some oil for frying
- 1 dash of fish sauce
- 1 ½ tbsp fish sauce
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Thai spaghetti with shrimp. Delicious, fruity, and slightly spicy, a very popular Thai recipe.
For the herb paste, slice the lemongrass, chop the galangal, and cut the kaffir lime leaves into small, thin strips. Cut out the middle strand of the leaves. Now, grind the lemongrass, galangal, kaffir lime leaves, and chili in a mortar and pestle until you get a paste. It doesn’t need to be completely fine, just make sure there are no large pieces left. Set the paste aside. Fry the prawns in a wok with a little oil until almost cooked. Then remove from the wok and set aside. Before preparing the sauce, add the spaghetti to boiling water and cook for about 1 minute less than the instructions on the package. In the same wok, fry the onions over high heat. Use the oil from the fried prawns, adding a little more oil if necessary. Once the onions are translucent, add the mushrooms and stir everything thoroughly, frying briefly. Add a good splash of fish sauce and mix everything again. Reduce the heat slightly, add the herb paste, and mix everything thoroughly. Now add the tomatoes and mash them into small pieces with a wooden spoon. Then add the chili paste and the 1.5 tablespoons of fish sauce and fold in. Now let the sauce reduce until the desired consistency. This takes about 5 minutes. Now add the cooked, drained pasta and the shrimp to the sauce and increase the heat again. Cook the pasta in the sauce for another minute. If the sauce becomes too thick, simply add a little water. Turn off the heat and add the lime juice and chopped cilantro. Serve and sprinkle with some more chopped cilantro, if desired. Add some Parmesan cheese if desired. This is a relatively quick dish to cook, so it’s best to prepare all the ingredients beforehand and place them in bowls next to the stove.
