Quince and apple cake

Ingredients for 1 servings:

  • 200 g butter, soft
  • 4 m.-sized eggs, separated
  • 150 g brown sugar
  • 350 g spelt flour
  • 1 packet of baking powder
  • 3 quinces, grated raw or apples
  • 3 apples, grated raw
  • lime juice for drizzling
  • 1 tsp, leveled cinnamon powder
  • 1 tsp, heaped vanilla sugar
  • 1 handful of hazelnuts, roughly chopped
  • Grease for the tray

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

makes 1 tray

Cream the butter with the egg yolks and sugar until fluffy. Combine the flour, baking powder, vanilla sugar, and cinnamon, then add to the egg mixture and knead thoroughly. Sprinkle the quinces and apples with lime juice (optional) and fold in along with the nuts. Beat the egg whites until stiff peaks form and fold in. Spread the mixture on a greased baking sheet. Bake at 180°C (top/bottom heat) for 35-40 minutes.
