Asian marinated chicken breast with broccoli and soba noodles

Ingredients for 2 servings:

  • 200 g chicken breast fillet(s), without skin and bones
  • 200 g broccoli
  • 200 g soba noodles or other thin noodles
  • some oil for frying
  • 1 tbsp sesame seeds, roasted
  • 4 tbsp soy sauce, light
  • 2 tbsp oyster sauce
  • 2 tsp Sriracha sauce
  • 2 garlic cloves, peeled, very finely diced
  • ½ tsp ginger, fresh, peeled, very finely diced
  • 1 tsp brown sugar
  • 1 tsp sesame oil, light

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 55 minutes

Combine the marinade ingredients, mix with the sliced ​​chicken breast, and let it stand for 20 minutes. Cook the noodles according to the package instructions until al dente, place in a colander, and drain. Blanch the broccoli florets in boiling salted water for two to three minutes, drain, and set aside. Heat a little oil in a wok or frying pan. Remove the meat from the marinade and fry on all sides, stirring. Add the noodles and the remaining marinade, adding a little water if necessary. Briefly fry the broccoli separately to prevent it from losing its color, and then add it to the meat and noodles. Season to taste and serve sprinkled with sesame seeds.
