Fried rice paper noodles

Ingredients for 4 servings:

  • 100 g rice paper for fried foods (will become 400 g rice noodles)
  • 3 tbsp vegetable oil
  • 2 garlic cloves
  • 80 g broccoli
  • 60 g carrot(s)
  • 60 g Chinese cabbage or pak choi
  • 3 eggs
  • 4 tbsp soy sauce
  • 3 tsp soy sauce, black
  • 2 tbsp oyster sauce
  • 1 ½ tsp sugar
  • ½ tsp white pepper, ground
  • 1 lime(s)
  • some chili powder
  • 200 g meat of your choice
  • 2 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cornstarch

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the garlic, flatten it, and finely chop it. Quarter the lime. Clean and chop the vegetables: peel and grate the carrots, cut the broccoli into florets, and cut the pak choi or Chinese cabbage into strips. Slice the meat and marinate it with soy sauce, oyster sauce, and cornstarch. Let it rest for 10 minutes. Cut the rice paper into wide strips with scissors and place it in a bowl of water. Let it soak for about 2-3 minutes. Drain the noodles in a colander. Heat a pan or wok over medium heat, heat the oil, and add the chopped garlic and meat. Fry until fragrant. Add the vegetables and stir-fry continuously. Add the noodles and season with soy sauce, black soy sauce, and sugar. Push the noodles to one side of the pan and add the eggs to the other side. Once the eggs are cooked, mix everything together and season with white pepper. Serve with lime and chili powder.
