Crusted kohlrabi

Ingredients for 4 servings:

  • 1 kg kohlrabi
  • 500 ml beef broth or vegetable broth
  • 2 tbsp butter
  • 2 tbsp flour
  • 250 ml sour cream
  • 2 egg yolks
  • Salt and pepper from the mill
  • 1 pinch(s) of sugar
  • 1 pinch of nutmeg
  • Butter for the mold
  • 150 g cooked ham, if desired
  • 1 bunch of parsley

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Bavarian recipe

Peel the kohlrabi and slice. Bring the broth to a boil, cook the kohlrabi slices in it for 15 minutes, remove and drain. Let the broth cool slightly. Heat the butter in a saucepan, add the flour, and make a light roux. Pour in some of the kohlrabi broth and bring to a boil once to form a creamy sauce. Mix the sour cream with the egg yolk and stir into the sauce, season with salt, pepper, sugar, and nutmeg. Cut the ham into strips. Grease a shallow, ovenproof dish with butter and add the kohlrabi slices. Pour the egg and cream sauce over the kohlrabi and scatter the ham strips on top. Bake in a preheated oven at 200-220°C for about 20 minutes. Serve sprinkled with finely chopped parsley. Serve with boiled potatoes and a green salad. Prepared without ham and with vegetable broth, the dish is a tasty side dish to pan-fried dishes or a delicious vegetarian dish for 2 – 3 people.
