Ingredients for 1 servings:
- 3 m.-large chicory
- 3 slices of Black Forest ham
- 2 tbsp butter
- 2 tbsp flour
- 250 ml milk
- 100 g cheese, grated
- salt and pepper
- nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
In the Airfryer
Clean the chicory and cut out the bitter core in a wedge shape. Blanch in boiling salted water for 10 minutes, remove with a slotted spoon and drain well. Then wrap the ham slices diagonally around it, place in the air fryer pot and bake for 3 minutes at 180°C so that the ham releases some of its flavor. In the meantime, melt the butter in a pan on the stove, sprinkle in the flour and sweat while stirring. Deglaze with the cold milk, stirring vigorously so that no lumps form. Simmer for a few minutes over a low heat. Now stir in about half of the grated cheese and let it melt. If the sauce is too thick, add a little more milk. Season to taste with salt, pepper and nutmeg. Pour the finished sauce over the wrapped chicory in the pot. Stir everything around a bit so that the sauce is evenly distributed and some of it gets mixed in with the chicory. Now sprinkle the remaining cheese over it and bake at 180° for about 12 minutes.
