Spaghetti with scampi

Ingredients for 2 servings:

  • 300g spaghetti
  • 300 g scampi
  • 4 cloves garlic, or more if you like
  • 4 tbsp tomato paste, or paprika paste
  • 2 tbsp oil
  • 1 bell pepper(s), grilled in the oven, possibly from the antipasti shelf
  • 100 ml coconut cream
  • Curry powder (Thai), or other Caribbean or Asian spice blends
  • 1 chili pepper(s), as desired

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook spaghetti according to instructions. Meanwhile, fry the scampi in a wok with plenty of garlic and oil, then add the tomato or bell pepper paste, the sliced ​​bell pepper, chili, and seasonings to taste. Deglaze with the coconut cream. Serve the spaghetti on a plate and top with the scampi and sauce.
