Ingredients for 2 servings:
- 300g spaghetti
- 300 g scampi
- 4 cloves garlic, or more if you like
- 4 tbsp tomato paste, or paprika paste
- 2 tbsp oil
- 1 bell pepper(s), grilled in the oven, possibly from the antipasti shelf
- 100 ml coconut cream
- Curry powder (Thai), or other Caribbean or Asian spice blends
- 1 chili pepper(s), as desired
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Cook spaghetti according to instructions. Meanwhile, fry the scampi in a wok with plenty of garlic and oil, then add the tomato or bell pepper paste, the sliced bell pepper, chili, and seasonings to taste. Deglaze with the coconut cream. Serve the spaghetti on a plate and top with the scampi and sauce.
