Ingredients for 2 servings:
- 150 g couscous
- 1 carrot(s)
- 1 sweet potato(s)
- 4 m.-sized tomatoes
- 1 spring onion(s)
- 1 apple
- 1 handful of almonds
- 100 g peas
- 300 ml vegetable stock
- 3 apricots, dried

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the vegetable stock to a boil, add the couscous, and simmer until the couscous has absorbed all the liquid. Add the chopped apricots. Meanwhile, wash, peel, or trim the sweet potato, carrot, spring onion, and apple, and cut into bite-sized pieces. Stir-fry them with the peas in a large pan or wok. Cover and simmer over medium heat for about 20 minutes. Add the couscous and apricots to the pan, along with the chopped tomatoes and almonds.
