Ingredients for 2 servings:

  • 4 m.-large spring onions, cleaned
  • 4 slice(s) garlic, very thinly sliced ​​and finely chopped
  • 2 tsp elderflower syrup, alternatively honey
  • 2 tsp white wine vinegar
  • 1 tsp lemon juice
  • 2 pinches of chili salt
  • 1 pinch(s) of pepper
  • 1 tbsp truffle oil or neutral oil
  • some lemon zest

Finely slice and chop the garlic. Mix with the elderflower syrup, white wine vinegar, lemon juice, chili salt, lemon zest, and pepper. Slowly add the oil, whisking slightly. Finely slice the trimmed spring onions and mix thoroughly with the marinade. Add fresh or dried herbs to taste. Let it marinate for a few minutes before serving.
