Crostini with ricotta cream

Ingredients for 4 servings:

  • 2 small tomatoes
  • 100 g ham, cooked spicy
  • 1 spring onion(s)
  • 1 clove(s) garlic
  • 200 g ricotta, soft (quark-like cream cheese)
  • 3 tbsp Parmesan, grated
  • Salt
  • Pepper, freshly ground black
  • 18 slice(s) white bread, thin

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and halve the tomatoes. Remove the seeds and stems, and cut the halves into very small cubes. Finely dice the ham. Preheat the oven to 250°C. Trim the spring onions, removing any large parts, wash thoroughly, and finely slice the green parts into rings. Halve the rings again. Peel the garlic and chop very finely. Mix the cream cheese with the diced tomatoes, ham, onion strips, and garlic. Stir in the Parmesan cheese and season to taste with salt and pepper. Spread the cream mixture on the slices of white bread. Bake in the center of the preheated oven for about 4-5 minutes, until crisp and lightly browned. Serve hot with a small salad.
