Fried chicken with bananas and peanuts

Ingredients for 4 servings:

  • 1 chicken (roast/grilled chicken, ready-made or homemade)
  • 2 bananas
  • 1 ½ tbsp peanut butter
  • 250 ml cream
  • 4 tbsp chili sauce, or ketchup
  • 200 g bacon, diced
  • 1 handful of peanuts
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tbsp paprika powder, (Allspiceón de la vera)
  • e.g. chili

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Remove the meat from the finished roast chicken from the bones. Then cut it into cubes, mix well with the warmed peanut butter (best done by hand), and place it in a baking dish. Halve the bananas lengthwise and place them on top. Sprinkle with the spices. Whip the cream and mix it with the chili sauce, then pour it over the chicken and banana mixture. Bake in a preheated oven at 200°C for about 20 minutes. Fry the bacon in a pan until crispy, then lightly toast the peanuts. Sprinkle both evenly over the dish once it comes out of the oven. Serve with mashed potatoes, rice, or a baguette, and perhaps a salad. Tips: The spices given above are based on a well-seasoned roast chicken. If the seasoning is a bit bland, add salt and pepper. If you can get Spanish bananas, use them because they are very aromatic. However, since they are smaller, you should use one more.
