Lightning-fast Chinese stir-fry with glass noodles

Ingredients for 2 servings:

  • 250 g vegetables (Asian stir-fried vegetables), frozen
  • 1 egg(s)
  • 100 g glass noodles
  • Soy sauce
  • Sambal Oelek, or Sriracha chili sauce
  • Sesame oil or vegetable oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Place the glass noodles in a bowl, heat water in a kettle, and pour over the noodles. Heat oil in a wok or deep-sided frying pan, add the vegetables, and cook, stirring constantly. Add the soft glass noodles to the wok and fry briefly with the vegetables. Stir in the egg. Add soy sauce and sambal oelek or sriracha sauce to taste and stir until the liquid has evaporated. If you have it, you can add lemongrass, lime juice, or fish sauce to taste. If you don’t like it vegetarian, you can also add shredded chicken. This is also a great way to use up leftover vegetables.
