Onion muffins with raw ham

Ingredients for 1 servings:

  • 500 g flour, type 405
  • 1 bag of baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 eggs
  • 250 ml milk
  • 4 large onions
  • 250 g raw ham, diced (Katenschinken)
  • 60 ml oil (sunflower oil)

Makes 24 pieces. Peel and finely chop the onions and fry in 30 ml of oil until translucent. Add 250 g of smoked ham and the remaining oil. Turn off the heat; you can continue cooking over residual heat. In the meantime, mix the batter; a hand mixer is not necessary, but you can also use a spoon. Pour the entire contents of the pan into the batter and stir vigorously to ensure everything is evenly distributed. Preheat oven to 200°C. Fill batter into small muffin cups, place on a baking tray, and bake at 180°C for 15-20 minutes, depending on the oven and your preference. Let the muffins cool overnight. You can also sprinkle them with Emmental cheese before baking. They are delicious and a hit with friends and colleagues.
