Ingredients for 1 servings:
- 24 slices of bacon
- 300 g rolls, stale from the day before (approx. 5 pieces)
- 200 g whipped cream
- 3 eggs, separated
- salt and pepper
- some milk or breadcrumbs (depending on the firmness of the dough)
- 300 g goat’s cheese
- 200 g crème fraîche
- 1 egg(s), separated
- ½ tsp thyme, possibly lemon thyme (depending on taste)
- salt and pepper
- 2 small onions
- 3 tbsp Balsamic vinegar di Modena
- 2 tsp lemon juice
- some white wine or water
- 200 g fig(s), dried (soft figs)
- 3 tsp honey
- ½ tsp thyme
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Savory-sweet muffins with figs, goat’s cheese, thyme, and bacon! Use up stale rolls! Makes 24 muffins.
Crumble the bread rolls from the previous day and soak them in the cream. Let them rest briefly. Add 3 egg yolks, salt, and pepper, and knead well. If the dough is too firm, add a little milk; if too soft, add breadcrumbs. Beat 3 egg whites until stiff peaks and fold in. Shape the dough into 24 equal-sized balls. Preheat oven to 180°C (fan oven). Grease a muffin tin and press a strip of bacon onto the edge of each hole. Place the dough balls in the holes and press them down onto the bottom and sides to create a hollow in the center. Mix the goat’s cheese with the crème fraîche, 1 egg yolk, 1/2 teaspoon thyme, salt, and pepper until smooth. Beat the egg whites until stiff peaks and fold in. Spread the cream into the dough holes and bake the muffins in the oven for 20 to 25 minutes. During this time, finely chop the onions and fry them briefly. Deglaze with balsamic vinegar and lemon juice. Add 1/2 teaspoon of thyme and, if necessary, a little more wine or water. Finely chop the figs, add them, and simmer for a while. Stir in the honey and, if desired, puree everything with a hand blender. Turn the muffins out of the tray and serve with the fig topping. Tastes good hot or cold, ideal for picnics, finger food, buffets, or appetizers! Tip: If you like, you can also garnish with walnut halves and fresh thyme! Variation 1: Use pears instead of figs. Variation 2: Sauté the diced bacon with the onions and add to the topping.
