Leberkäse – Rösti

Ingredients for 4 servings:

  • 400 g potatoes, floury
  • 150 g Leberkäse, sliced
  • ½ bunch of spring onions
  • 3 tbsp clarified butter
  • 1 tsp mustard
  • Salt
  • pepper
  • chives for garnishing

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Wash and brush the potatoes. Then boil them in unsalted water until tender. Remove the potatoes from the heat, drain, rinse, peel, and let cool. Cut the Leberkäse into fine strips. Trim and carefully wash the spring onions, then slice them into very fine rings. Grate the cooled potatoes very finely. Heat the clarified butter in a large pan. Add the potatoes, Leberkäse, and spring onions to the pan and fry, turning occasionally. Season generously with mustard, salt, and pepper and use a spatula to push them together to form lots of small rösti. Fry the rösti until golden brown, then turn and fry on the other side just as golden brown. Serve immediately. Serve with a mixed green salad dressed with vinaigrette. Garnish the plates with fine chives if desired.
